ITALIAN PASTA SALAD
1/2 medium red onion, finely chopped
1 pack of pasta
1 cup cherry tomatoes
1 cup of round cheese
5-6 slices of salami
1/2 cup olive
1/4 cup coarsely chopped fresh parsley leaves
1/2 cup olive oil
1/4 cup vinegar
1 clove of garlic, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Combine all the sauce ingredients in a bowl and whisk. Add the finely chopped red onion into the sauce and set aside to soften it. Cook the pasta. Boil 2 liters of brine in a large saucepan over medium-high heat. Add the pasta and boil for about 8-10 minutes. After filtering, cool with cold water. Put the salad ingredients in a bowl.
