Pumpkin Mac and Cheese
• 1 pack of pasta (as you wish)
• 2 spoonful butter
• 1/2 cup chopped spring onions
• 3 cloves of garlic (chopped)
• 2 tablespoons flour
• 1 + 1/2 glasses of milk
• 2 cups of grated cheddar cheese
• 1 cup boiled pumpkin (mashed)
• 2 tablespoons of chopped fresh sage (if you wish)
• Salt • Black Pepper
• 1/2 cup bread crumbs
Cook your pasta. Melt the butter in a deep frying pan over medium heat. Add onion and garlic and cook for about 5 minutes until soft. Add flour and mix until a paste is formed. Cook for 2 to 3 minutes. Slowly add the milk. Add 1 cup of cheese and whisk. When the cheese is melted, add the zucchini and sage. Sprinkle with salt and pepper. Mix the zucchini mixture with the pasta and spread it in an ovenproof container. Mix the remaining cheese and breadcrumbs together and sprinkle on top. Bake in a preheated 180 degree oven for 30 minutes. Sprinkle with spring onions and serve hot.
