Delicious vegetable soup that will come as medicine in cold winter days with its content! Be sure to try vegetable soup, which is very easy to make!
1 large onion
4 celery stalks
1 tablespoon of olive oil
Salt, pepper, paprika
3 cloves of garlic
3 cups of water
1 bay leaf
3 sprigs of fresh thyme (Optional)
100 ml cream
Roughly chop all vegetables. Put the oil in a saucepan and heat it. Add the onion, carrot, and celery to the pot. Add the spices according to your taste. Stir occasionally by stirring until the vegetable sweat, soften and smell sweet; 5 to 10 minutes. Mix potatoes, garlic, bay leaves, and thyme. Cook for 5 minutes. (If the pot looks dry, add more oil). Add the water, leave to boil. Cook the potatoes until they are easily pierced with a fork; about 15 minutes. Add the cream before removing the soup from the stove. Remove and discard bay leaves and thyme branches. Mix the soup with a blender until smooth.
Note: You can differentiate the recipe by adding and removing the vegetables you want.
